The active lipase enzyme will produce a specific ratio of free fatty acids as a result of milkfat lipolysis when added directly to milk.Helps create a mild "picante" flavor. Use mild lipase powder to make Mozzarella, Asiago, Provolone, Feta and Blue cheeses.
